But let’s move on to the million dollar question: why are glucose spikes bad? «Ingesting glucose, therefore sugars, is not the problem. The problem is when too much is ingested, repeatedly, even when our body does not need it. In the book I give the example of a steam train, which is fed more coal than it takes to power the boilers. The same happens to our mitochondria: according to a recent theory, the model of allostatic loadwhen the mitochondria are submerged by excess glucose, small molecules are released which have important consequences: free radicals. Furthermore, part of the glucose is transformed into fat. When free radicals appear after a spike, they trigger a dangerous chain reaction.

“These molecules are harmful because they damage everything they touch. They change our genetic code (DNA) at random points, creating mutations that activate harmful genes that can lead tothe onset of tumors. They open holes in the cell membrane, compromising their functioning. Under normal circumstances, we are able to handle a moderate amount of free radicals in cells; the repetition of the peaks, however, means that they become too many to be controlled ».

When we fail to neutralize free radicals, the body is subjected to a condition called oxidative stress. This makes us tired prematurely, makes us sick. It makes us age prematurely, according to a process called glycation. The combination of too many free radicals, oxidative stress and glycation leads to a general state of inflammation of the body.

“Under normal circumstances it is a protective measure to defend against intruders, but when it is chronic it is harmful, because it targets the body itself. From the outside we see redness and swelling, inside tissues and organs are slowly damaged ».

Alcohol, smoking, leaky gut syndrome and substances released from body fat also contribute to inflammation. L’chronic inflammation and the source of most of the chronic diseaseswhich can lead to stroke, respiratory, heart and liver problems, and obesity diabetes.

So how do you avoid these glucose spikes? There are gods tricks, easily practicable in everyday life, tested by Jessie personally. “The post ice cream walk allowed me to reduce glucose peaks by 30%, for example,” she explains, smiling. “But starting every meal with vegetables can help reduce them by 75%.”
